Day 16 of 35

Today has been a decent day.  I got a load of towels and sheets washed, dishwasher emptied and loaded, and the kitchen counters dejunked!  :)  I went to a spin class at noon and will not do that again until I am much thinner.  Oh my goodness!!  My butt was hurting so bad from that stinkin seat; I left the class early.

Didn't really have any goals today b/c I was so stinkin tired last night to write any.

Tomorrow's goals are:
1.  Be to the gym by 0950.
2.  Wash our sheets.
3.  Do week one's discussion board (DB).
4.  Eat a veggie (or two) with dinner.
5.  Eat all meals @ home.

We had a yummy dinner tonight.  It was put together last minute and I wanted to use up some things from the freezer b/c it's so full.  So we had Mozzarella-Stuffed Turkey Burgers w/cheesy rice and broccoli.  Delish!  :)

My knees actually hurt tonight as well.  I think it's from the spin class though.  When we had to up the speed, my knees would start burning.  And now they hurt when I bend them.  :(  I hope I didn't do anything bad to them.  I need to be able to give it all I have in my training sessions.  We'll see how tomorrow morning goes!

Tonight's dinner was:

Mozzarella-Stuffed Turkey Burgers


Ingredients:
1 lb lean ground turkey
1 egg
1/2 can (15 oz) black beans, rinsed and drained
1/2 red bell pepper, diced (optional)
1/2 cup shredded mozzarella cheese
1/4 teaspoon garlic powder, or to taste
salt and ground black pepper to taste

Directions:
1.  Mix the ground turkey, egg, black beans, red bell pepper, mozzarella cheese, garlic powder, salt, and black pepper together in a bowl until blended; form the mixture into four patties.
2.  Heat a large skillet over medium heat; cook the turkey patties in the skillet until cooked through and no longer pink in the center, 7-10 minutes per side.  An instant-read meat thermometer inserted into the center of a patty should read at least 160 degrees (70 degrees C).


P.S.  I had to use a green bell pepper instead of a red one.  We didn't have any black beans so I didn't use any.  And I couldn't find our garlic powder so I used Italian seasoning instead.  :)  I didn't cook the patties in a skillet but in the oven instead.  350 degrees for 20 minutes, turned them and cooked them for another 5 minutes.  :)  They turned out delicious!  Next time, though, we are gonna cook them w/red bell peppers (or maybe red AND green), garlic powder, and black beans.

Gonna finish watching last night's "Dancing with the Stars" and then go to bed.  G'nite!  :)
